The holiday season is upon us, and for me that means I am going to need ALL the coffee. Anyone with me? There is so much to do this time of year that it is as equally exhausting as it is joyful, and caffeine is needed!
We live in Richmond, VA, and shortly after we moved here we decided to take a staycation to get to know our new city. One of the things we really enjoyed was visiting a different coffee spot each morning and trying out the locally roasted coffee. Normally I feel the need to sweeten up my coffee with milk and sugar to get rid of the bitter flavor, but when you’re drinking high quality coffee with the pour over method, there is no bitter taste.
What is Pour Over Coffee
If you’ve never had a “pour over” before, I encourage you to try it! It’s a method of brewing coffee through a funnel straight into your mug. Hot water is poured on the ground coffee in the funnel and comes through the drip slowly and it creates a very clean and delicious cup of coffee.
Once we became hooked on pour over coffee, my husband wanted to find a way to do it at home and he bought a drip coffee filter from World Market that sits on top of your normal coffee mug. We’ve only been doing this for a couple of months so I was excited when I was asked to check out Cafe Kreyol, a coffee importer and roaster that works directly with coffee farmers in Haiti to create sustainable jobs.

Cafe Kreyol was founded in 2012 by Joey Stazzone when he traveled to Haiti and found a unique coffee bean that was unlike anything in the U.S. Without the means or opportunity to ship their coffee to the rest of the world, many Haitian farmers are left with an abundance of their high quality coffee and are offered little money for their product. Stazzone went on to visit the coffee farms in the area to share his Cafe Kreyol vision and invite them to join his co-op. The farms became certified organic in order to provide an all natural product free of harmful chemicals and pesticides. Cafe Kreyol works to alleviate poverty in rural coffee growing regions, one cup at a time.
For my at home pour over I tried Cafe Kreyol Zombie Desert (medium roast with nutty taste) and Carribean Blue (light roast with higher caffeine level). Both flavors are excellent and make me want to try them all!
How to make pour over coffee
To make a pour over at home we use a ceramic coffee dripper similar to this. Put a coffee filter inside that fits your dripper and fill with 2-3 tablespoons of freshly ground coffee. It can be somewhat coarse (like kosher salt). Boil your water for about 30 seconds once it comes to a rolling boil and then slowly pour it over the coffee grinds, starting in the middle and circling outward in a spiral. Let it sit until it has finished dripping. That’s it! You can experiment with less or more coffee depending on what kind it is and what tastes best to you.

Pour Over Coffee
- 12 oz boiling water (boil for about 30 seconds once water reaches a rolling boil)
- 2-3 tbsp fresh coffee grounds
- Use a coffee dripper with a filter and place over a 12 oz (or bigger) coffee cup. Add 2-3 tbsp coffee grounds and slowly pour boiling water over the grounds, starting in the middle and working outward in a spiral. Let soak all the way through until it has finished dripping.
