1lbturkey breast slices (from deli or leftover from Thanksgiving)
1/2cupcranberry sauce (from a can or leftover from Thanksgiving)
1onion, sliced into thin rings
2cupsarugula
For Blue Cheese Spread
3ozblue cheese, crumbled
2tbspmayonaisse
1tbspsour cream
1tspdijon mustard
1/4tspgarlic powder
Instructions
Caramelize the onions: Coat the bottom of a skillet with olive oil. Let heat over medium-high. Add onions and cook, stirring often so the onions don't burn. Cook until brown.
Make blue cheese spread: Add all ingredients to a bowl and mix until combined.
Assemble sandwiches: On bread slices, add cranberry sauce to one piece, and blue cheese spread to the other. In between bread slices add turkey, caramelized onions, and arugula.
