Method
- Cook pasta according to package instructions.
- Slice sausages into rounds.
- Add olive oil to a pan over medium heat and when heated add sausage and mushrooms. Let brown, stirring occasionally, about 8 minutes.
- Add garlic and let cook until fragrant, about 2 minutes.
- Add white wine, Dijon mustard and flour. Stir until reduced by about half.
- Add the heavy cream, sun-dried tomatoes and lemon juice. Cook for 2-3 minutes.
- Add spinach and basil. Let cook for a minute or so until it wilts.
- Add cooked pasta to pan and stir to combine.
- Remove from heat and add cheese. Stir until melted. Season to taste with salt and pepper.
- Garnish with additional basil and Parmesan.
