5 oz package Litehouse Blue Cheese Center Cut, crumbled
8 oz cream cheese, softened
1/4 cup dried cranberries
1/4 cup pecans, chopped
1/2 tsp Worcestershire sauce
1/4 teaspoon Garlic powder
Pepper, to taste
1/2 tsp fresh rosemary, finely chopped
1 tbsp butter
2 shallots, thinly sliced
1/2 cup plus 1 tsp sugar
2 cups fresh cranberries
1/2 cup water
Bread for serving (toasted baguette slices, small toasts, pita chips, etc)In a medium bowl, combine the crumbled Litehouse Blue Cheese Center Cut and cream cheese. Mix well.
Add dried cranberries, pecans, Worcestershire sauce, garlic powder, pepper, and rosemary. Mix well, then spread into a shallow serving dish.Melt butter in a medium-sized skillet over medium heat. Add shallots and cook until tender. Reduce heat and add 1 tsp sugar. Mix. Cook for about 10 minutes, stirring occasionally. Layer shallots on top of the cheese mixture in serving dish.Using same skillet, increase heat to medium and add cranberries, 1/2 cup sugar, and water. Cook until thickened. Note: Cranberries will burst and pop during cooking.Top the dip with cranberries and serve with toasted baguette slices, small toasts, pita chips, etc.Optional: If serving the dip along with bread on a serving tray or platter, you can garnish with fresh rosemary sprigs and a few fresh cranberries for a festive touch.

1/2 medium (or 1 small) onion, diced
1 stick butter, plus 1 additional tbsp for cooking onion
1 12 oz bag herb seasoned cubed stuffing mix
1 10.5 oz can cream of chicken with mushroom soup
1 14.5 oz can chicken broth
1/2 cup dried cranberriesAdd onion and 1 tbsp butter to Ninja® Foodi™ Deluxe Pressure Cooker and set to sear/sauté on medium heat. Cook until translucent.
Add additional stick of butter and allow to melt.
Add remaining ingredients. Mix.
Add pressure lid and set to slow cook. Cook on low for 1 hour.
Remove lid and set aside. Stir. Close crisping lid and set temp to 390 degrees Fahrenheit for 7 minutes.
Scoop out stuffing and add to a casserole dish, making sure to leave the crispy parts on top.
